There’s a reason why cauliflower rice has grown in popularity since it emerged on the market a few years back. While those of you new to this concept may be thinking “cauliflower rice? How unappealing!” Let me tell you, this popular substitute has a growing fan base all because of its demonstrated health benefits, deliciousness and convenience. 

Cauliflower rice can be found on most store shelves these days (Trader Joe’s anyone?) and can also be made at home with the use of a blender. Whether homemade or store bought, this alternative has crept its way into numerous staple dishes and has resulted in many consumers, myself included, never looking back. It’s a fantastic substitute for rice, grains and legumes and is low in carbohydrates, contains tons of nutrients and, most importantly, leaves you feeling satisfied.
