I don’t know about you but when I was growing up, spaghetti dinner was a pretty big thing…

So when I started to learn about the harmful effects of flour and sugar it quickly became apparent that pasta ????  may have to be a thing of the past. If you’ve had to wrestle with similar feelings of loss, I’m here to offer you exciting news. You can have your spaghetti and eat it too! That is of course, with this pasta substitute, spaghetti squash.

If you’ve been a stranger to spaghetti squash than you’re probably wondering “how the heck can this be a replacement for pasta?” Well let me tell you, it can AND it’s amazing! The delicious vegetable acts as the perfect alternative while adding yummy flavor, perfect texture and a ton of nutrients to your plate such as fibre, vitamin c, potassium and the b-vitamins.

Although there is some preparation involved, it does become easy once you get the hang of it (I promise!)

Start by slicing the squash in half and scooping out all the seeds. Once it’s cleaned out, place the two halves face up on a rimmed baking sheet than drizzle them with olive oil, pepper and kosher salt. Pop the squash in the oven for approximately 45-55 minutes until the squash feels soft. Once it feels cooked, take it out of the oven and let it cool for about 10 minutes. Than grab a big spoon and start scooping out the stringy “noodles” and viola! You’ve got a perfect substitute for pasta.  Top with a delicious meat sauce and you’re golden! Hey, you may even forget that you’re actually eating a vegetable ????????‍♀️
