We here you – when life gets busy we need to be able to whip something up fast while keeping it healthy and delicious. Well we’ve got you covered – this week’s recipe, Zucchini Bolognese, has your vegetables and protein and requires little prep time.

The recipe comes from one of our go-to site’s, Nom Nom Paleo, and offers a quick and easy alternative to Meghan Markle’s famous Zucchini Bolognese. But… unlike Meghan’s version which takes up to four hours to make, this one has you eating within an hour! AND the bonus is that the spiralized zucchini is one more pasta alternative to put in your cookbook.
As far as “supplies” go you’ll need an instant pot or pressure cooker and a spiralizer. If you don’t have a spiralizer kicking around, not a problem, simply pick up some pre-made spiralized veggies at the store. All the ingredient’s you’ll need on hand are:
- 2 tablespoons extra virgin olive oil or avocado oil
- 1 large yellow onion, diced
- 1 pound bulk Italian sausage
- 1½ pounds zucchini, diced into ½-inch pieces
- 3 garlic cloves, minced
- Magic Mushroom Powder or Diamond Crystal brand kosher salt (with added umami boosters detailed in the instructions)
- Juice from ½ lemon
